Another Healthy Breakfast Recipe!

Once you get started experimenting with pancakes you’ll be pleasantly surprised with how versatile and quick this breakfast can be.

I find that a good blender makes things easy.  Here’s one concoction I found to be very pleasing.  It takes about 1 minute to prepare the batter and another 5-10 minutes to fry them.

Breakfast will be done in 20 minutes and kids can get out the door!

Coconut-Kefir Pancakes


  • a handful of almonds (soaked overnight if possible)
  • a handful of walnuts (soaked overnight if possible
  • 1 plantain, peeled and cut into large chunks
  • 2 eggs
  • 1/4 c kefir (yogurt would be fine too)
  • 1/4 c coconut milk (again, you could use yogurt)
  • a handful of hemp seeds
  • 1/2 tsp baking soda
  • 1 tblsp coconut oil
  • more coconut oil for frying


  1. Put everything in a blender.
  2. Blend until smooth
  3. Fry over medium heat in coconut oil, about 2 minutes on each side. Be careful not to use too high a heat or they will burn on the outside and be mushy on the inside.
  4. Top with nut butter, yogurt, maple syrup, fresh fruit.
