Grain Free Pancake

One thing I’ve learned as I experiment with different foods and different ways of eating is that there are a million ways to make a pancake! 

We’ve been grain free on-and-off in my family, so I came up with a bunch of grain free pancake recipes.  This is my favourite. You’ll find more grain free options in my recipe guide.

Grain free pancakes


  • 2 c ground nuts (almonds and walnuts work well)
  • 2 plantains, peeled (you can also use bananas)
  • 1 tsp baking soda
  • 4 eggs
  • 1 tblsp coconut oil or butter (optional)
  • coconut oil for frying


  1. Grind the nuts in a blender until they're as fine as they can be.
  2. Add the rest of the ingredients and blend until smooth (a high powered blender works well here... I use the Vitamix).
  3. Make sure you pan is hot before adding the batter, but cook over medium heat. It takes a while to get the heat just right for these.
  4. Cook over medium heat in coconut oil about 2 minutes on each side.

These pancakes take a bit longer to cook than you might be used to.  Cook for about 2 minutes per side on medium heat.
