Cheese Muffin

Here’s a quick breakfast recipe that could be just the thing for those of you who feel rushed in the morning.

You could make a whole bunch, freeze them and then stick them in the oven in the morning.

Cheese Muffins


  • 4 eggs
  • 2 tblsp full fat yogurt
  • 2 tblsp coconut flour
  • 2 tblsp ground nuts or nut flour
  • 1/2 tsp baking powder
  • 3/4 c grated cheese
  • salt and pepper to taste
  • chopped up whatever veggies you'd like


  1. Blend everything together (I used the food processor).
  2. Fill muffin tins (I used silicone muffin cups which worked beautifully).
  3. Bake at 350 for about 20 minutes.
  4. Cool.
